Berry Parfait



Lots of berries that you desire (Strawberries, blueberries, raspberries, blackberries etc)- if you use strawberries quarter them up.

1 small lemon—juiced and zest

1 container of Mascarpone Cheese

milk (just enough to thin it out)

some powdered sugar (prob a ½ cup –all subject to taste but powdered sugar is easier to dissolve and mix use more of it than granulated sugar)

some granulated sugar (prob ¼-1/2 cup –all subject to taste)

1 tsp of vanilla

Chocolate truffles

1.  In a medium bowl, mix mascarpone cheese, powdered sugar and granulated sugar.

2.  Use milk to thin it out to the consistency that you desire.

3.  Incorporate vanilla, lemon juice and zest in the mixture.

4.  Layer berries and cream and garnish with a chocolate truffle and voila!
