I made this recently for my husband and it was a hit. I’m making it tomorrow too… SHHHHHH!!!
Ingredients:
2 cans of croissant rolls
5 eggs (broken up like a scramble)
1 ¾ cups of skim milk
8 patties of sausage (Brown, and break up into pieces)
2 slices of thick deli ham steak (cut into chunks)
2 cups of sharp cheddar cheese
2 small onions, diced
4 small mild/sweet peppers diced (preferred are the sweet kind)
1. Preheat Oven to 350.
2. Grease a 9 x 13 pan. Set aside.
4. Bake the croissant rolls according to package directions. Get them nice, toasty and a touch over golden brown but not burned—you’ll want them a little on the crispy side).
5. While the rolls are baking, mix in a medium bowl: eggs, milk, sausage, ham, cheese, onions and peppers
6. Cut the toasty croissants into rough pieces and evenly place them in the bottom of the greased 9 x 13 pan.
7. Pour the egg mixture evenly over the bread pieces.
8. Cover with aluminum foil and bake for 45 minutes.
9. Uncover and bake for an additional 30 minutes.
10. Let rest and cool for 5 -10 minutes before serving.
